But waiting for the fall season to taste my favorite soup is too long for me. So I decided to experiment with some soup recipes and came up with these three turkey soup ideas that we all can enjoy during the summer season.

Low-Calorie Turkey Vegetable Soup
This skinny turkey vegetable soup will make you rethink your summer diet. It is quick and easy to make – no one wants to spend long hours cooking – and the ingredient list consists of all the healthy items. You can skip a few though, if you suffer from certain food sensitivities.
Ingredients:
4 cups water
4 teaspoons sodium-free chicken bouillon granules or 4 cups turkey broth
2 cups cooked turkey breast, cubed
1/2 cup uncooked whole wheat thin spaghetti noodles
2 celery ribs, chopped
1/2 cup frozen peas
2 medium onions, chopped
1/2 cup sweet red pepper, chopped
2 medium carrots, halved and thinly sliced
3 garlic cloves, minced
1 bay leaf
1 tablespoon olive oil
1/4 teaspoon pepper
1 tablespoon fresh cilantro, minced
1/2 teaspoon dried basil
1/4 teaspoon ground cumin
1/2 teaspoon dried thyme
Directions:
In a large saucepan, saute carrots, onions, red pepper and celery in olive oil for 5 to 7 minutes or until tender. Stir occasionally. Add minced garlic and cook 2 to 3 minutes longer. Stir in the bouillon granules or turkey broth, water, peas, bay leaf, thyme, basil, cumin, and pepper.
If you add 4 cups of turkey broth then add only one cup of water, or skip it at all. Bring your soup to a boil. Lower the heat and simmer, uncovered, stirring occasionally, for 15 to 18 minutes.
Cook whole wheat thin spaghetti noodles according to package directions and drain. Add turkey and noodles to your soup. Bring to a boil. Discard bay leaf. Let your soup cool. Serve with cilantro, parsley or dill. You can freeze your soup to enjoy it the next day.
Chilled Cream Cheese Turkey Soup
If you do not care about the calories and crave something cheesy, a chilled cream cheese turkey soup is your lifesaver. The recipe requires fewer ingredients than the previous one, but still the soup is healthy and tasty.
Ingredients:
2 cups cooked turkey, cubed
4 cups turkey broth
1 small onion, peeled and chopped
2 medium potatoes, peeled and cubed
3 medium carrots, peeled and cubed
2 garlic cloves, minced
1 tablespoon olive oil
1 cup milk
1 package cream cheese, cubed
1/4 cup all-purpose flour
salt and pepper to taste
2 tablespoons fresh parsley, minced
2 tablespoons fresh dill, minced
Directions:
In a large saucepan, saute onion in olive oil. Add the broth, potatoes and carrots. Bring to a boil. Lower heat, cover and let it simmer for 20 minutes, or until potatoes and carrots are tender. Add garlic, turkey, dill, salt, and pepper. Let it simmer for another minute or two.
Whisk milk and flour in a medium bowl. Add it to your soup and bring to a boil. Let it boil for a minute. Add cream cheese, stirring well and cook until melted. Let it cool and serve with parsley, dill or any fresh herb of your choice.
5-Ingredient Turkey Soup Topped with Avocado
Are you so low on a budget that all you have in your fridge is some turkey meat, beans, and salsa verde? Great, you can make a delicious summer soup in a matter of 15 minutes. Of course, you will have to make turkey broth and cook the meat first. I am sure you know how to do it.
Ingredients:
6 cups turkey broth
4 cups cooked turkey, cubed
2 cups salsa verde
2 (15-oz) cans beans, drained
avocado, diced
Directions:
Add turkey broth, cooked turkey, beans, and salsa to a large saucepan. Stir well. Bring to boil. Cover and simmer for 5 to 10 minutes. If you have some vegetables to add, then simmer for 15 to 20 minutes. Top with avocado and enjoy. What can be easier?
